Fresh Blueberry Muffin - Worth to try

I got this recipe from http://aziejaya.blogspot.com .  I had all the ingredients including fresh blueberries, very quick and required very few ingredients.

Azie's recipe yield about 9 normal size muffin.  I thought I will use smaller ones.  I got about 24 pieces of small ones and 2 normal size muffin.

I guess you can also try with any other fruits like raspberries, blackberries or even mango, peaches etc.  I should try with mango in future.

Lets look at the recipe.

Grandmother Hinckley's Blueberry Muffin

Ingredients

3 tbs butter
2/3 cawan castor sugar
1 egg - whisk lightly
1/2 cup milk
1.5 cup flour
2 tsp baking powder
1/2 tsp salt
1- 1.5cups of blueberries - washed and dried completely
1 tsp vanilla extract - (Azie added, I did not though)

Direction

1.  Beat butter together with sugar.  Next add in egg beat well and followed by milk.

2.  Sieve flour + baking powder, add into batter, followed by salt.  Mix well.

3.  Finally add in blueberries, scoop into muffin tray or into cup cake.

4.  Bake at 170C for 20-25minutes. Remove from oven.

5.  While still warm brush with melted butter and sprinkle some sugar.  Its optional - I did not do it.

6.  Cool on wire rack.

Chocolate Chips Muffins

I have a habit of copying/printing recipes in the hope of doing them sometime later.  I cant remember where I had copy this recipe..Nevertheless it turn out quite well.

Chocolate Chips Muffins

Ingredients Required
A.  1 cup of butter - melt
     2 cups of fresh milk
     2 eggs - whisk slightly
     1 tsp of essence vanilla

B.  3 cups of flour (I used all purpose flour)
     1/2 cup of cocoa powder
     2 tsp of baking powder
     1/2 tsp of bicarbonate powder
     2 cups of brown sugar

1/2 cup of chocolate chips
muffin papers

note : I did not use cocoa powder, subsituted cocoa powder with flour too.


How to Prepare
  1. Preheat oven at 190C, 10-15mins.
  2. Prepare muffin cups on trays or muffin trays.
  3. Mix all ingredients of B till well incorporate.
  4. In a different bowl, whisk all of A ingredients till well mix.
  5. Add gradually of B into A, whisking till no lumps and mix well
  6. Fill the muffin cups 3/4.
  7. Add in chocolate chips on top of the batter.
  8. Bake at 20mins or till it is done.
  9. Remove on rack, cool and serve.

Banana Muffins


Had a few bananas left and need to clear before going for a short holidays.
this is a simple and easy recipe to follow.

Banana Muffins

1 1/2 cup of all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 large bananas - mashed
3/4 cup sugar
1 egg
1/3 cup butter melted

Method
1. Preheat oven 175C. coat muffin pans with non stick or use paper liners
2. sift flour, baking powder, baking soda and salt. Set aside.
3. Combine bananas, sugar, egg and melted butter in a large bowl. Fold in flour mixture and mix until smooth. Scoop into muffin pans.
4. Bake in preheated oven. Bake mini muffins 10-15mins. Large for 25-30mins. Muffins will spring back when tapped.

One Minute Muffins

this recipe was extracted from Eating & Cheating by Gill Holcombe (Hodder & Stoughton)


I was really curious with this recipe whether it works or not as its ingredients are really few and simple. (the write up mentioned that the main ingredients of the ice cream are eggs, sugar and some kind of fat therefore it is the basic kind of cake can be made simply by mixing together ice cream and flour) eemmm very interesting I thought so me and my daughter, Varsha, took it to task with making of this muffins.

True to its simple ingredients, it was done in less than 15minutes. Lets look at the ingredients and the way to do it.

What you need
6 scoops of ice cream ( I use vanilla flavor)
6 tbsp self raising flour
Sugar Sprinkles

note : use a tablespoon to measure the ice cream if you dont have an ice cream scoop.

Method

Take the tub of ice cream out of the freezer about 20 minutes beforehand, or put the right amount of ice cream in a mixing bowl and leave for about 10 minustes to soften up.

Meanwhile, preheat the over to 190C and put paper muffin cases on a baking tray.

Beat the ice cream with a wooden spoon until its really soft and runny, then sift in the flour and stir just enough to mix it in.

Spoon the mixture into muffin cases, top with sugar sprinkles and then bake for 10 to 12 minutes until the cakes are risen and golden.

and cup cakes/muffin couldnt be any simpler......next time will try with different flavor of ice cream....
